Zucchini has never really been one of my favorite veggies but last night I made something called a “Zucchini Gratin” and it totally blew my mind. Probably because it was loaded with sexy cheese.
It was a simple side dish that I served with grilled chicken and parsnip chips (recipe to come later.
What you’ll need:
- Two regular sized zucchinis, washed with peel kept on
- One small yellow onion, chopped finely
- Some butter
- Heavy cream (I just used milk and I’m sure it didn’t make much of a difference, in fact it was probably much healthier.)
- Cheese, I used a combination of cheddar and gruyere
- Salt and pepper to taste
What to do:
On the large holes of a box grater, shred the zucchini and transfer it to a colander.
Stir in about a teaspoon of salt. This will help to draw out the moisture. Then, using your hands, squeeze out as much water as you possibly can.
Then, in a saucepan, warm up some butter and stir in the onions, letting soften for a few minutes. When they’re nice and soft, add the zucchini, a splash of milk, some salt and pepper and stir, warming for a few minutes.
Transfer the mixture into a baking dish and mix with your cheese, sprinkle a bit of extra cheese on top.
Put the baking dish in the oven and warm through, it shouldn’t take too long, then serve!
