“I Really Wanna Lose 3 Pounds” Quinoa Salad


So I moved to the UK and I gained what I like to call “The England Freshman 15”.

I normally eat pretty healthily (uh…except for the whole sugar thing…) but I’m currently trying to swap chocolate, chips/crisps, candy etc with healthier snacks like fruit, and nuts and sprouts.

Inspired by my favorite Mean Girls quote, I made a deliciously healthy vegan quinoa salad that I’m storing in a mason jar in the fridge. I work from home, but if I had an office job, I’d most definitely bring jars of salad to work for lunch like some shamefully pretentious environmental hipster (which I guess I am).

What you’ll need:

  • 1 cup of red or white quinoa 
  • Some type of bean, I used sprouted mung beans which are mega tasty!
  • Sunflower seeds
  • Chopped long green onions

This was my basic recipe but there’s a whole world of other things you could add to your salad: avocado, peas, spinach, almonds, etc. If you aren’t vegan you can add some crumbled feta or some parm…the possibilities are endless!

For my salad dressing I used a simple combination of:

  • Some good olive oil
  • A splash of cider vinegar
  • A drizzle of soya sauce
  • A tiny squeeze of lemon juice
  • Salt and pepper

What to do: 

Cook the quinoa in some veg stock use twice as much water as quinoa, bring the water to a boil, bring down to a simmer and cook until the water is evaporated, stirring occasionally. In a small frying pan, toast the sesame seeds lightly for a few minutes…make sure they don’t burn.

Let the quinoa and the seeds cool down thoroughly and once they have, mix in a bowl with the sprouts and onions and whatever else you want to add.

Add your dressing and mix well.

Store in a tightly sealed container and the salad will keep for days!
