Cupcakes: Lime Marscapone Frosting and Toasted Coconut Topping!

Here’s a delicious dessert  perfectly fit to follow an Asian-themed dinner.

I’m really not a baker, so what I did was buy some instant vanilla cupcake mix.

For the frosting I used a full container of marscapone cheese. I mixed in about 1/3 of a cup of icing sugar. Added the juice and zest from one lime and OH YEAH the most DELICIOUS FROSTING I’VE EVER TASTED!

In a frying pan I lightly toasted some desiccated coconut.

Sprinkle the coconut on top of the frosting and stuff your face like the pig that you are.
